The Distilled Monoglyceride (DMG) are primarily used as surfactants, in the form of emulsifiers. They are commonly used in the commercial food products. These emulsifiers are used in small quantities and are known as E471. They helps to prevent mixtures of oils & water from separating. They are oftenly used in bakery products, beverages, ice cream, chewing gum, shortening, whipped toppings, margarine, and confections.
